Traditionally, Cabernet Sauvignon has a French heritage, with some of its first mentions dating way back to the 17th Century when Cabernet Franc was mistakenly mixed with Sauvignon Blanc. But, as the saying goes “There are no mistakes, just happy accidents” and what a happy accident this turned out to be. It became widely popular, grown in the south-west of France before reaching the shores of Australia during the 18th century.
You can find Cabernet Sauvignon in most regions of Australia. With over 24,000 hectares of total plantings, this particular wine grape does well in moderate climates and is produced in regions such as Coonawarra, Margaret River, Barossa Valley, McLaren Vale and Mount Benson, just to name a few. But these climates, the variety in soil, and the technique majorly impact the style, intensity, and flavour of the final product. For example, produce from McLaren Vale will often show notes of dark chocolate and Coonawarra typically, cigar box, mint and cedar.
While many Cabernet Sauvignon wines are ready to enjoy right away, this wine ages well. Perfect for when you want to impress, some high-quality Australian Cabernet Sauvignon can age for upward of 20 years! Over time, the colour of the wine lightens, the texture softens, and the wine begins to take on more savoury flavours like roasted nuts.
While regional characteristics are notably different, Australian Cabernet Sauvignon is deep purple and tastes of dark berries and cherries. A medium to full-bodied character and firm, structured tannins are present no matter where the grape is grown. It is readily available, with the quality of options ranging from affordable Cabernet Sauvignon for everyday drinking, through to some of the most sought-after, collectable fine wines.
