Fish Friday falls in autumn, and we recommend enjoying it with a uniquely Australian ingredient: the great Barramundi. OK, this fish might not be an exclusively autumnal delight (Barramundi season starts in February and extends through to the end of the year), but our fishing friends in the know tell us it peaks during a neap tide, which occurs from March to May. This large salt- and fresh-water fish has firm, pearly-white flesh when cooked, which flakes off into sweet, buttery and magnificent morsels.

So, what’s the ultimate wine and food pairing here?
