Our wine-making team uses advanced alcohol-removal technology, employing a GoLo heat-pump powered unit, the first of its kind in the world, to separate wine into three parts—alcohol, de-alcoholised liquid and essence—before blending the essence back with the de-alcoholised liquid. The process removes the alcohol through vacuum distillation at low temperatures, therefore, retaining all the original goodness and varietal flavour minus the alcoholic baggage.
